Cultural Fusion Prawns

This dish is a fusion between the maharastrian and the south Indian style of cooking. The prawns have been marinated in a simple Maharastrian style, while the addition of cashew nuts and curry leaves give it the south Indian touch and also elevates this dish to the next level. Can be served with Indian bread and steam rice.



Ingredients:

Prawns – 500 gms
Mustard oil -1 Tsp
Oil - 2 Tbsp
Red chilli powder - 1 tsp
Turmeric - 1/2 tsp
Cumin powder - 1/4 tsp
Garam masala - 1/2 tsp
Coriander powder - 1 tsp
Cashew nuts - 2 Tbsp
Lemon juice - 1
Fresh coriander - 2 to 3 Tbsp
Garlic chopped - 1 Tbsp
Ginger juliennes - 1 Tbsp
Salt -to taste

Method:

1.     Marinate the prawns with salt, turmeric powder, red chilli powder, garam masala, coriander powder, cumin powder, mustard oil and lemon juice for 15 minutes.
2.     Mean while heat oil and separately fry cashews, ginger and garlic till crisp keep aside.
3.      Heat oil in a pan add curry leaves and marinated prawns cook for some while till prawns water evaporates, and the masala comes a bit close.
4.     Add some part of Fried cashew nuts, ginger and garlic and with a good heap of fresh coriander mix well.
5.      Once cooked garnish with remaining fried cashew, ginger and garlic and coriander.
